Mascarpone Mousse and Blueberry Compote


6 Biscuits
Mascarpone mousse
Blueberry Compote



  1. 2 Tablespoons sugar
  2. 2 cups all purpose flour
  3. 2 tsp baking powder
  4. ¼ tsp baking soda
  5. 1 ½ cup heavy cream
  6. ¾ tsp salt

Mascarpone Mousse:

  1. ½ lb mascarpone cheese
  2. 1 cup manufacturing cream
  3. ½ cup sugar
  4. ½ cup vanilla

Blueberry Compote:

  1. 1 ½ basket of fresh blueberries
  2. ½ cup sugar
  3. zest of ½ lime
  4. juice from ½ lime



  1. Sift together flour, baking powder, baking soda and salt in a bowl.
  2. Add heavy cream and mix through.
  3. Pour into un-greased 8” square pan and bake until golden (18-20 minutes).
  4. Remove from pan and place on cooling rack.  
  5. Once cooled, cut into six biscuits. Cut each biscuit in half horizontally.

Mascarpone Mousse:

  1. In a bowl, combine cheese, cream, sugar and vanilla. Whisk together until mixed.

Blueberry Compote:

  1. In a skillet, saute blueberries with sugar and zest and simmer for 10 minutes until even throughout.

Serve bicuits with mousse on top and then top that with blueberries!
