I was born and raised in Manila, Philippines. I studied Liberal Arts and was granted a scholarship to study in Rome in 1998. I lived in Rome for three years having completed my Masters on Theology. I worked with a non-government organization for 7 years traveling to different countries helping build Filipino communities and aiding them in addressing issues such as migration, family and labor.

My love for food began early in life.  As a I child, I’d go to the nearby bakery to watch the pastry chef make breads and sweets.  To me it was art! In high school, I supported myself by baking pastries and preparing packed lunches – I’d sell them to classmates and teachers. Even though I traveled to different places for work, I always made sure to check on the local cuisines and learn them. I switched my career to culinary in 2009 while on vacation to the Philippines I studied Culinary Arts. When I returned to the US, I landed a job as a Kitchen Supervisor and continued my culinary education at the International Culinary School. 

As a chef, I love to work on different fusions, mainly Asian fusion, and Italian-Asian Fusian. I always impart a modernist approach in my cooking with my own twist of flavor. My long term goal is to become the best chef that I could be for my two kids; Francesco and Chiara who so dearly adored my profession as chef. I dream of opening my own restaurant or food truck serving high-end Filipino cuisines with modern twist.
