Whole Roasted Chicken (Entree)
Ingredients:
- Whole chicken- 6-8 pounds
- 2 oranges quartered
- ½ cup lemon juice
- ½ cup lime juice
- 1 tablespoon grated orange zest
- 1 clove garlic, minced
- 1 teaspoon sugar
- Dash of hot pepper sauce
- ½ cup balsamic vinegar
- ½ cup rice wine vinegar
- Red pepper flakes to taste
- Olive Oil
- Onion Slices
Instructions:
- Quarter the oranges and yellow onion and stuff into whole roasted chicken.
- Bathe in olive oil and add seasonings along with juices and vinegars for a sweet and sour taste.
- Put in glass casserole dish and cook in the GE Advantium speed cook oven for 1 to 1 ½ hour (depending on size).
- Halfway through cook time, remove juices from chicken and flip over for even crispy on all sides.
Zucchini Tomato Parmesan (Sauce)
Ingredients:
- Zucchini
- Yellow squash
- Tomatoes
- Grated parmesan
- Olive oil
- Sugar
- Basil
- Pepper
- Yellow squash
Instructions:
- In a 2-quart round casserole, combine olive oil, sugar, oregano, salt, basil and pepper.
- Add zucchini and yellow squash; stir to coat thoroughly.
- Cover. Place dish on glass tray.
- Microwave at high for 8-10 minutes or until vegetables are tender; stir after 5 minutes.
- Add diced tomatoes; cover and let stand for 2 minutes.
